Redcurrant and Orange Ingredients 4 Chops or Leg Steaks 4 tablespoons of redcurrant Jelly ( or Cranberry jelly for a change) 1/4 pint orange Juice 1 lamb or vegetable stock cube 1 medium onion, chopped 3 medium carrots, peeled and chopped 1 tablespoon Port (Optional- shame to leave it out though!)
Method 1. Layer the meat, onion and carrots in an oven proof dish. 2. Mix the redcurrant and orange juice together and pour over the meat. 3. Leave for a couple of hours, or overnight. 4. Braise in a medium oven for 2 hour. 5. Remove the meat then add the port and thicken the sauce by simmering on the hob.
