Mutton Stew Ingredients 500g cubed mutton 2 Medium onions - peeled and thinly sliced 3 medium carrots - peeled and sliced a couple of sprigs of chopped parsley (optional) 1lb potatoes - peeled and sliced 11/2 pint stock
Method. 1. In a deep oven proof dish layer the potatoes, onion, carrots meat and parsley, starting and finishing with a layer of potatoes. 2. Pour over the stock ensuring it reaches the top of the potates. 3. Cover the dish with a lid or foil and bake in a medium oven for 2 hours.
