Mutton Recipes

We don't mind that our sheep are very slow growing or that the meat requires 14 days hanging, after all if something is this good it is worth waiting for.
Our Wether Mutton has a wonderful rich texture, similar to beef and is bursting with flavour, imagine lamb with a fuller, meatier succulent taste, which makes it perfect for any roast, casserole, stew or curry, infact our meat is so tender it can be cooked on a griddle or BBQ.

Almost any lamb or beef recipe can be adapted for mutton, and our mutton goes particularly well with fruity ingredients. I recommend a long slow cook .Set your oven as you would for beef and extend the cooking time slightly.

Roast Mutton

Place your Leg or Shoulder of Elan Valley Organic Mutton Joint in a covered roasting tin.
I like to rub wholegrain mustard and garlic on the skin of the joint, you could add mint or rosemary, but of course it is delicious enough as it is.

Preheat you oven to 230oC, 450oC or Gas Mark 8

Roast for 1/2 hour, then baste the joint.

Turn the oven down to 180oC, 350oC or Gas mark 4.
Roast for 3 hours.
Leave to stand for 5 mins then slice and enjoy.
