Honey and Cider

Honey and Cider

Ingredients.
4 chops or leg steaks
3-4 tsp Welsh honey
Fresh rosemary sprigs
1 tsp ground ginger
1/4 Pint dry cider
Salt and Pepper

Method.
1. Combine the honey, rosemary and ginger
2. Use this mixture to coat the mutton steaks
3. Pour the cider over the meat. Leave to marinade for a couple of hours or overnight if possible.
4. Cover with a double layer of foil as the honey is inclined to burn.
5. Braise in a medium oven for approx 2 hour.
6. Remove the meat, then thicken the sauce by simmering on the hob.
